盐1小勺,1 tsp salt


黄酒2大勺,2 tbsp Shaoxing wine


花椒粒1大勺,1 tbsp szechuan pepper


底料Saucepan bottom:


植物油5大勺,5 tbsp vegetable oil


香油1大勺,1 tbsp sesame oil


黄豆酱2大勺,2 tbsp soybean paste


红腐乳1块,1 piece red fermented bean curd


蚝油1大勺,1 tbsp oyster sauce


糖2大勺,2 tbsp sugar


草果1个,1 tsaoko cardamon


小茴香1大勺,1 tbsp fennel seeds


孜然1小勺,1 tsp fennel seeds


八角2个,2 star anise


桂皮1片,piece of Chinese cinnamon stick


香叶3片,3 bay leaves


陈皮1大片,1 piece of dried citrus peel


砂仁2个,2 fructus amomi


干辣椒一把,handful of dried chillies


白胡椒粒2小勺,2 tsp white pepper


花椒粒1大勺,1 tbsp szechuan pepper


姜一块,a piece of ginger


大葱一根,1 leek


青蒜,green onion


配菜Side dish:


冬瓜,winter melon


冻豆腐,frozen tofu


大白菜,Chinese cabbage


宽粉,wide starch noodles


羊肉片,slice lamb


茼蒿,crown daisy


毛肚,beef stomach
